Chicken Marinara

How to make Chicken Marinara.

INGREDIENTS: Serves 4

  • 4 chicken breasts
  • 2 garlic cloves, peeled and chopped
  • 400 g (1 can) diced tomatoes
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon dried oregano
  • 1/2 cup chopped basil leaves
  • 1 cup shredded mozzarella
  • 2 tablespoons olive oil
  • 1/2 cup water
  • Salt, to taste
  • Pepper, to taste
  • Pasta or rice, to serve

INSTRUCTIONS:

  1. Season the chicken breasts with salt and pepper on both sides and set aside.
  2. Heat 1 tablespoon oil in a large ovenproof skillet over medium-high heat.
  3. Place chicken in the pan in a single layer.
  4. Cook 4-6 minutes on each side.
  5. Cook chicken in batches if needed.
  6. Remove from the pan and set aside.
  7. Preheat oven to 400 F or 200 C.
  8. Add the remaining oil to the same pan.
  9. Add the garlic cloves.
  10. Sauté, stirring occasionally, for 1 minute or until fragrant.
  11. Add the canned tomatoes, water, Italian seasoning and oregano.
  12. Season with salt.
  13. Bring to a boil.
  14. Reduce heat and simmer for 3 minutes.
  15. Add chicken back to the marinara sauce and top with mozzarella.
  16. Transfer the skillet to the oven.
  17. Bake for 7-10 minutes or until the cheese is melted and chicken is cooked through.
  18. Ideally, an instant-read thermometer should read 165 F or 75 C to ensure chicken is fully cooked.
  19. Serve over white rice or pasta and enjoy!
