
How to make a Chicken and Mango Salad.
Ingredients: Serves 2
- 1 lb cooked, cubed chicken (you can use canned chicken too)
- 1 ripe mango, diced
- 1 stalk of celery, diced
- 1 inch piece of ginger, grated
- 1 teaspoon lime zest
- 2 tablespoons fresh lime juice
- 1/2 teaspoon salt
Directions:
- Just mix everything together in a big bowl and you are done.
- Serve on salad plates over romaine lettuce, or alongside big pieces of iceberg lettuce to make wraps, or enjoy with crackers as an appetizer.
