Chicken & Leek Stew

How to make a Chicken and Leek Stew.

Ingredients: Serves 4

  • 2 large chicken breasts
  • 2 leeks, sliced
  • 2 sticks of celery, diced
  • 2 carrots, diced
  • 400g tin chopped tomatoes
  • chicken stock
  • water
  • chilli, to taste
  • salt, to taste
  • pepper, to taste

Method:

  1. Saute the chicken breasts, then chop them into 1-2 cm cubes and transfer to a large pot.
  2. Add all the other ingredients and simmer for about 30-60 minutes.
  3. Add extra water if you need to.
  4. When done, leave to rest for 5 minutes.
  5. Serve and enjoy!
