
How to make a Chicken and Leek Stew.
Ingredients: Serves 4
- 2 large chicken breasts
- 2 leeks, sliced
- 2 sticks of celery, diced
- 2 carrots, diced
- 400g tin chopped tomatoes
- chicken stock
- water
- chilli, to taste
- salt, to taste
- pepper, to taste
Method:
- Saute the chicken breasts, then chop them into 1-2 cm cubes and transfer to a large pot.
- Add all the other ingredients and simmer for about 30-60 minutes.
- Add extra water if you need to.
- When done, leave to rest for 5 minutes.
- Serve and enjoy!
