Chicken & Fruit Salad

How to make a Chicken and Fruit Salad.

Ingredients: Serves 2

  • 1 cup cubed cooked chicken breast
  • 2/3 cup seedless green grapes
  • 1 large peach, chopped (3/4 cup)
  • 1 medium stalk celery, diced (1/2 cup)
  • 1/3 cup plain fat-free yogurt
  • 2 tablespoons fat-free mayonnaise or salad dressing
  • 4 lettuce leaves

Directions:

  1. In a medium bowl, mix yogurt and mayonnaise until smooth.
  2. Stir in remaining ingredients.
  3. Cover and refrigerate for at least 30 minutes until chilled.
  4. Serve over a bed of lettuce leaves and enjoy!
