Cheesy Chips & Chorizo is an ideal evening comfort food meal. I use fresh potatoes but you can also use frozen ones. The grated cheese that I used comes from Lidl already packed in small sealable bags which can be kept in the fridge for several weeks. Another option for those that do not like chorizo is to use bacon which will also make a delicious dinner and can be done in the same way as this recipe. And how about adding slices of green peppers? There are many other ingredients that come to mind and I´m sure that you are thinking this too!
INGREDIENTS: (for 1 person)
1 Large potato
1: Cut the potato into chips and fry until ready.
2: Cut the chorizo into small cubes.
3: Cover a plate with oven paper and put the chips on top. Spread the chorizo cubes over the chips. Sprinkle grated cheese over the top and place under the grill for 3 minutes.
4: When ready slide the oven paper from under the chips so that you are left with the contents on your plate ready to eat.
