Cheesecake Stuffed Apples

How to make Cheesecake Stuffed Apples.

Ingredients: Serves 6

For the Apple Topping:

  • 2 large Granny Smith apples
  • 1 tablespoon lemon juice
  • 1 tablespoon cold water
  • 1/2 teaspoon cinnamon

For the Cheesecake Filling:

  • 8 oz cream cheese
  • 1 tablespoon sugar
  • 1 cup whipped cream

For the Assembly:

  • 2 large Granny Smith apples
  • pecan or walnut pieces
  • caramel sauce

Instructions:

  1. Make the topping by placing two apples on a work surface (reserving the two other apples).
  2. Cut it into halves and remove the cores.
  3. Then chop them into a 1/2-inch dice.
  4. To a small saucepan or skillet, add the chopped apples, lemon juice, water and cinnamon.
  5. Place over medium heat and cook until softened, for about 10 minutes.
  6. Remove from heat to cool down.
  7. Make the filling by placing the softened cream cheese and sugar in a bowl.
  8. Beat with a wooden spoon or hand mixer until smooth and creamy.
  9. Then fold in the whipped cream or topping.
  10. Set aside.
  11. To assemble cut the remaining 2 apples in half and scoop out the cores with a spoon.
  12. Rub with lemon juices to prevent browning.
  13. Put the halved apples on serving plates.
  14. Spoon cheesecake into each, followed by apple topping.
  15. Sprinkle optional pecan or walnut pieces and drizzle caramel sauce on top.
  16. Serve immediately.
