This recipe which I called Boiled Eggs In Fried Tomato Sauce is very cheap and simple to prepare. It makes a great dish to serve over boiled potatoes or rice. Any leftover sauce can be kept in the fridge during a few days and will make a great use to many of my pasta recipes.
INGREDIENTS: (for 2 people)
400g Jar of fried tomato sauce
3 Garlic cloves
5cl White wine
1 Tsp Dried parsley
1 Tsp Sweet paprika
1: Boil the eggs, take the shell off and leave aside.
2: Finely chop the onion and garlic.
3: Grab a deep 30cm frying pan and cover the base with olive oil. Place on medium to high heat and add the garlic and onion. Fry until golden brown.
4: Add the sweet paprika, dried parsley, white wine, jar of tomato and salt to your own liking. Boil on medium heat for 15 minutes stirring every now and then. Then cut the eggs in half, place them evenly over the sauce and leave to cook for another 5 minutes. Remove from the stove and serve.
