Batata Vada

How to make Batata Vada.

Ingredients: Serves 2

For the Potato Filling:

  • 1/2 kg Potatoes
  • 12 curry leaves
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 2 chopped green chillies
  • 1/2  tsp turmeric powder
  • 1 tsp chaat masala
  • 1 tbsp lemon juice
  • a few chopped coriander leaves
  • 1 tsp salt
  • vegetable oil

For the batter:

  • 3/4 cup gram flour
  • ½ tsp turmeric powder
  • 1/2 tsp salt
  • 1/2 tsp chilli powder
  • 2 tbsp rice flour


  1. Firstly boil the potatoes and mash them well, there should be no lumps.
  2. In a pan, add 1 tbsp of oil.
  3. When the oil gets hot, add the mustard seeds, when they start crackling add the cumin seeds, curry leaves and  chopped chillies.
  4. Saute for a minute on low heat until fragrant, then add the turmeric powder and remove from heat.
  5. Add them with the oil to the the mashed potatoes, add salt, chat masala, chopped corrainder and lemon juice.
  6. Mix well.
  7. Make equal sized medium balls with the potato mixture.
  8. Keep aside.

For the batter:

  1. Mix gram flour, rice powder, turmeric powder, salt and red chilli powder.
  2. Add water to make a slightly thick batter.
  3. Dip each potato ball in the batter, coat evenly and deep fry in hot oil until golden brown.
  4. Serve and enjoy!
