Banana & Meringue Pudding

How to make a Banana and Meringue Pudding.

Ingredients: Serves 6

  • 4 bananas, cut into ¼-inch-thick slices
  • 5 cups vanilla wafer cookies
  • 4 large eggs, separated
  • 1 cup + 3 tablespoons sugar, divided
  • 2½ cups milk
  • 1 tablespoon butter
  • 1 teaspoon vanilla extract
  • ⅓ cup all-purpose flour
  • ¼ teaspoon salt


  1. In a medium saucepan, whisk together 1 cup of sugar, flour and salt.
  2. In a medium bowl, whisk together milk and egg yolks.
  3. Whisk milk mixture into sugar mixture until smooth.
  4. Cook over medium heat, whisking constantly, for 10 to 12 minutes or until mixture is very thick.
  5. Remove from heat and whisk in butter and vanilla.
  6. In a 2½-quart baking dish, layer half of vanilla wafers, half of sliced bananas and half of custard.
  7. Repeat the layers.
  8. Pre-heat oven to 350F.
  9. In a large bowl, beat egg whites with a mixer at medium-high speed until a soft peaks form.
  10. Gradually add remaining 3 tablespoons sugar, beating until stiff peaks form.
  11. Spread meringue onto the custard.
  12. Bake for 12 to 15 minutes or until golden brown.
  13. Serve warm or cover and refrigerate for up to 2 days.
