Baked Eggs

How to make Baked Eggs.

Ingredients: Serves 1

  • 2 eggs
  • 1 cup baby spinach
  • 1/4 cup diced onion
  • 1 cup diced zucchini
  • 3 tomatoes, diced
  • 1 garlic clove, minced
  • 2 tablespoons grated Parmesan
  • Salt
  • Pepper
  • 1 tablespoon olive oil, plus more for baking dish
  • Toast (optional)

Method:

  1. Pre-heat the oven to 400F.
  2. In a medium skillet, heat the olive oil over medium-high heat.
  3. Add the onions and zucchini to the skillet.
  4. Saute for 5 minutes, stirring occasionally.
  5. Add the tomatoes and garlic, and saute for 1 minute.
  6. Season with salt and pepper.
  7. Toss the spinach on top, cover the pan, and cook until the spinach starts to wilt, for about 1 minute.
  8. Stir the spinach into the other vegetables.
  9. Drizzle some olive oil in the bottom of a small oven-safe baking dish.
  10. Transfer the vegetables to the dish.
  11. Crack the eggs right on top.
  12. Season with salt and pepper, and top with the grated Parmesan.
  13. Bake for 10 to 12 minutes, or until eggs are cooked the way you like them, turning halfway through.
  14. Take out of the oven and leave to cool slightly, for about 1 to 2 minutes.
  15. Serve with toast, if desired, and enjoy!
