I have been wanting to make this dish for a very long time and finally did so. Very easy to make, only takes around 40 minutes and is soooo delicious. Oh, and of course, bread is essential if you like dipping, the sauce is very flavourful. I recommend it, specially if you are a squid lover😄👍😉
And for those who want to know what these baby squids are called in spanish, then “chipirones” it is👍

INGREDIENTS: (for 2 people)

500g Baby squid (Whole or cut in pieces)

2 Large potatoes

1 Tomato

1 Green pepper

1 Small onion

3 Garlic cloves

1 Glass of white wine

Olive oil

1 Fish flavoured stock cube

Salt

Yellow food colourant

50cl Water

 

 

INSTRUCTIONS:

1: Grab a cooking pot, add 3 tbsp of olive oil and heat up on high heat.

2: Add the squid and fry it for 5 minutes.

3: Finely dice the onion, garlic, pepper and tomato, and add it to the squid. Continue frying for another 5 minutes.

4: Add salt to your own liking, 1 tsp of food colourant, the fish stock cube, the glass of wine and the water.

5: Cut the potatoes in small cubes and add it to the pot. Put the lid on and cook on medium to high heat for around 30 minutes or until the potatoes are soft, check by stabbing them with a knife.

6: Remove from the heat and leave to rest for 5 minutes before serving.
