Avocado & Egg Salad

How to make an Avocado and Egg Salad.

This avocado and egg salad works great on its own, with some bread on the side or with a bowl of soup. Ideal for a light and healthy meal!

Ingredients: Serves 2

  • 1 large or 2 small avocados
  • 2 eggs
  • 8 tomatoes cherry
  • Lettuce leaves
  • Arugula leaves
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Extra virgin olive oil

Method:

  1. Boil the 2 eggs.
  2. Once ready cut them into 4 parts each.
  3. Remove the skin from the avocado and cut it into long slices or strips.
  4. Remove the seed.
  5. Chop the tomatoes in half.
  6. Put all these ingredients in a salad bowl.
  7. Add the previously washed and cleaned lettuce and arugula leaves.
  8. You can cut the lettuce into smaller pieces to make it easier to eat.
  9. Add salt, pepper and olive oil to taste.
  10. Mix all the ingredients well.
  11. Serve and enjoy!
