Asparagus in Passion Fruit Sauce

How to make Asparagus in Passion Fruit Sauce.


  • 500 g asparagus
  • 1 orange
  • 1 passion fruit
  • 1 teaspoon brown sugar
  • 100 g prawns
  • 10 cherry tomatoes
  • pepper
  • salt
  • butter
  • chives


  1. Peel the asparagus and cut off the wooden part at the bottom.
  2. Place them in a baking tray on aluminium foil (on the shiny side).
  3. Squeeze the orange and halve the passion fruit.
  4. Mix the juices and bring them up to taste with brown sugar, some pepper and salt.
  5. Halve the cherry tomatoes.
  6. Pour the juice over the asparagus.
  7. Place some cubes of butter and the halved tomatoes on top.
  8. Fold the aluminium foil “en papillotte”.
  9. It should be hermetically closed.
  10. Place the baking tray in the oven which is preheated at 240°C.
  11. Steam the passionate asparagus for 40 minutes in the oven.
  12. Five minutes before they are ready you can start preparing the prawns.
  13. Heat some butter in a small pan.
  14. Stir fry the prawns for a few minutes.
  15. Not too long, otherwise they are overdone.
  16. Take the asparagus out of the oven and open the foil.
  17. Check whether the asparagus are ready and transfer them to the plates.
  18. Top with the prawns and chives.
  19. Serve and enjoy!
