How to make Anchovies In Vinegar.

Ingredients: For 6 People.
500g / 1lb of Fresh Anchovies.
1/2 a Cup of White Wine Vinegar.
1 Large Garlic Glove, very finely chopped.
1/4 Cup of Virgin Olive Oil.
1 Teaspoon of Sea Salt..
1.5 Cups of Water.
Fresh chopped parsley and olives for a garnish.
Remove the heads, insides and backbones of the anchovies.
Wash in cold water until the water runs clear.
Then freeze the anchovies for 24 hours.
The next day defrost the anchovies.
Place them in a small dish, forming layers.
Make a brine using by mixing the sea salt with 1 cup of the water.
Cover the anchovies and leave to soak for 3 hours in a cool place.
After 3 hours, drain the liquid away.
Place the anchovies in a bowl, skin side up.
Mix the vinegar with the remaining half a cup of water, and leave for another 3 hours.
By this time the anchovies should be white.
Remove the anchovies from the vinegar and place on a serving dish.
Drizzle the olive oil over, distributing evenly.
Sprinkle the garlic and chopped parsley over the anchovies.
Distribute the olives around the dish.
