How to make Anchovies In Garlic.
Ingredients: Serves 6.
500g/ 1lb Of Fresh Anchovies.
4 Garlic Gloves, thinly sliced.
8 Tablespoons of Olive Oil.
1/2 Cup of White Wine.
3 Tablespoons of White Wine Vinegar.
Fresh chopped Parsley to garnish.
Remove the heads, insides and backbones of the anchovies.
Wash in cold water until the water runs clear.
Fill a bowl of water and leave the anchovies to soak for 10 minutes.
Then remove from the water and place on kitchen paper to remove excess water.
Peel the garlic and slice into thin slices.
Heat the olive oil in a frying pan, until hot.Add the garlic and fry until golden.
Place the anchovies into the frying pan with the garlic and fry for a 1 minute.
Pour in the wine and vinegar.
Lower the heat and cook the anchovies for 2-3 minutes.
Season with salt and pepper.
Then turn up the heat and cook until the liquid starts to evaporates.
Remove the anchovies from the pan and place on a serving dish.
Sprinkle the chopped parsley over.
