Almond Biscotti

How to make an Almond Biscotti.

Ingredients: Makes 2 logs

  • 150g blanched almonds
  • 2 eggs
  • 2 cups of plain flour
  • 1/2 teaspoon baking powder
  • 1 cup caster sugar
  • finely grated lemon rind


  1. Pre-heat the oven to 170C and line a baking tray.
  2. Place the eggs, sugar and lemon rind in a mixing bowl.
  3. Beat with an electric beater until pale and thick.
  4. Fold in sifted flour, baking powder and almonds.
  5. Use your hands to knead the dough on a lightly floured surface.
  6. Divide the mixture in half.
  7. Form 2 long logs about 25cm long x 5cm wide and place on a prepared baking tray, leaving space between the logs.
  8. Bake for 20-25 minutes until the dough is firm to the touch and slightly golden.
  9. Remove from the oven and set aside to cool completely.
  10. Turn the oven down to 140C.
  11. Cut the logs into 0.5 cm diagonal slices.
  12. Lay the slices flat on the baking tray and return to the oven for 15-20 minutes, turning once, until they are completely dried out.
  13. Remove from the oven and allow to cool completely.
  14. Serve and enjoy!
  15. You can also store the in an airtight container for 2-3 weeks.
