African Yam Soup

How to make an African Yam Soup.

Ingredients: Serves 4-6

  • 2 pounds yam, peeled and cut into medium pieces
  • 2 pounds fish, tilapia,snapper, or chicken thighs or legs, cleaned and cut into medium pieces
  • 2 cups sliced carrots
  • 5 garlic cloves
  • 2 tomatoes
  • ½ medium onion, chopped
  • 1 tablespoon chopped ginger
  • 1 teaspoon white pepper
  • 2 teaspoons smoked paprika
  • 1 tablespoon bouillon powder
  • 1 tablespoon green onions
  • 5 cups of water or more
  • 2 tablespoons parsley
  • 4 basil leaves
  • Salt, to taste
  • Pepper, to taste
  • ½ scotch bonnet pepper, optional

Method:

  1. In a food processor or blender, blend the garlic, tomatoes, parsley, basil, onions and ginger.
  2. Add to a large pot, together with the white pepper, smoked paprika, bouillon powder, green onion and about 3 cups of water and bring to a boil.
  3. If using chicken, add it this point.
  4. Then let it simmer for about 10 minutes.
  5. Gently add the yams, fish, carrots, salt and more water, about 2 cups, enough to cover the ingredients.
  6. Bring to a boil and let it simmer for about 10 minutes.
  7. Adjust for salt and pepper.
  8. Remove from the stove and serve.
